Exultet is an elegant and refined interpretation of Fiano di Avellino. It is a cru produced exclusively with grapes from a single vineyard in Fiano located in Lapio. It has a bright yellow color with green reflections and clear varietal scents of linden, acacia e thymus. With a dense and continuous structure it develops aromas of exotic fruit, candied citrus fruits and honey in a very light mineral matrix. Its particular elegance also derives from its short stay, during fermentation, in small oak barrels. It is a long-lived wine that can age well for several decades thanks to its richness in aroma precursors and its freshness and taste integrity. The name given to the wine originates from Mirabella Eclano's Exultet where a tribute to bees is also reported. The Exultet are liturgical scrolls of the southern Middle Ages. They are a sort of ante litteram multimedia product made up of parchment sheets sewn together on which the text of the benedictio cerei is transcribed, accompanied by musical notations and illustrated by miniatures that run in the opposite direction to writing.
